A Ristretto or Caffe Ristretto literally means “shrunk” or “short”. To prepare this drink, simply pull a single shot of espresso in an espresso cup, but stop the pull at 1/2 to 3/4 ounce of espresso. A ristretto drink will be less bitter than a normal espresso. |

The word “cappuccino” means “little Capuchin”. It is derived from the hood, or cappuccino, of brown robes worn by the Italian Capuchin order of monks. |

Thanks for you patience in dealing with the "new" coffee grinder. To help us determine the proper settings for the grind, Bob has placed a notebook in the top drawer next to the refrigerator. There is now a blue dot on the grinder at a setting which many baristas are using. Find out where your setting is relative to this dot. It is extremely important that you calibrate your setting before you begin your shift! Use the timer and shot glass for this. |

After you have pulled your espresso shots, make sure that you place the to-go cup with espresso (or saucer, cup, and spoon) on the upper counter. Then after you have steamed your milk, pour the steamed milk into the cup. This will allow your customer to see his/her coffee being made. Don’t make the drink on the lower counter if you can avoid it. Finally, don’t forget the spoon for those who have a “real” cup! |
